Toad in the Hole

The classic hot dish called toad in the hole consists of a Yorkshire pudding poured into a casserole dish, with sausages—the “toads”—peeping out. Rest easy; the dish never included actual toads. It is said that as far back as the 1700s, the name was used to refer to a piece of meat baked into a large pudding. This one is made with juicy pork sausages nestled in a crispy, tender pudding, and drizzled in onion gravy.

Ingredients

  • 1 scant cup (100 g) + 1 Tbsp (7.5 g) all-purpose flour, divided
  • ½ tsp (2.5 ml) dry mustard
  • Salt, to taste
  • 1 egg
  • 1¼ cups (300 ml) milk
  • 3 thyme sprigs, leaves only
  • 8 plain pork sausages
  • 2 Tbsp (30 ml) vegetable oil
  • 2 onions, finely sliced
  • 1 tsp (5 ml) brown sugar
  • 2 cups (475 ml) beef stock
  • Ground black pepper, to taste

Directions

  1. Mix a scant cup of flour (100 g) with dry mustard and a large pinch of salt in a large bowl.
  2. Crack egg into a well in the center of flour and gently beat with a fork, incorporating a small amount of flour.
  3. Slowly stir in milk until batter is smooth.
  4. Stir in thyme leaves.
  5. Preheat oven to 400°F (200°C).
  6. Toss sausages with 1 tablespoon (15 ml) of vegetable oil in a roasting pan.
  7. Roast sausages for 15 minutes and then remove them from oven.
  8. Quickly pour batter into pan around sausages (batter will sizzle as it meets the oil).
  9. Return pan to oven and bake for 40 minutes, until batter is puffy and crisp. A knife inserted into the center should come out clean.
  10. Sauté onions with remaining oil in a skillet, stirring frequently, until soft and deep golden-brown, about 15 minutes.
  11. Stir in brown sugar and cook for 5 minutes, stirring often.
  12. Add 1 tablespoon (15 g) of flour and cook, stirring constantly, for 2 minutes.
  13. Slowly mix in stock and simmer for 4–5 minutes, until thickened.
  14. Season with salt and black pepper.
  15. Spoon gravy over wedges of pudding to serve.

Notes

  • Instead of plain sausages, toad in the hole can be made with one large, coiled Cumberland sausage. The cooking method is the same.
  • Another British dish sometimes called toad in the hole is a piece of toast with an egg cooked into the center; a more common name for this dish is egg in a basket.
