Rather than yeast, scones use baking powder as a leavening agent, making them denser than other teacakes or sweet buns.

Ingredients

  • 3 cups (720 ml) all-purpose flour
  • 1½ Tbsp (22.5 ml) baking powder
  • 1 tsp (5 ml) salt
  • ¼ cup (50 g) sugar, divided
  • ¼ cup (60 g) butter, chilled
  • 1 egg
  • ½ cup (120 ml) milk, divided

Directions

  1. Preheat oven to 350°C (175°F).
  2. Sift together the flour and baking powder into a large bowl.
  3. Stir in the salt and 3 tablespoons (45 ml) of sugar.
  4. Cut butter into the flour mixture until it resembles breadcrumbs.
  5. Beat together the egg and 1/3 cup (80 ml) of milk in a small bowl.
  6. Add the egg mixture to the flour mixture, stirring to combine. Add a little milk if the mixture is stiff and dry.
  7. Roll out the dough on a floured surface to a ¾-inch (2-cm) thickness.
  8. Use a round cookie cutter 2 inches (5 cm) in diameter to score the dough.
  9. Brush circles of dough using the remaining milk and sprinkle them with the remaining sugar.
  10. Place the dough circles on a lightly greased baking sheet and bake for 25 minutes.
  11. Serve hot or cold.
