Spotted Dick
Spotted dick is an iconic British steamed pudding with a commonly misconstrued name that has a highly contested origin. While dick was a common term for puddings in the United Kingdom during the 19th century, the dessert is called spotted because of the many dried fruits that are distributed throughout the dough. Often served with a thin custard sauce, this decadent steamed pudding is so popular among Brits that it is sometimes sold fully prepared in cans.

Ingredients
- Salt, to taste
- 2 tsp (10 ml) baking powder
- 2½ cups (300 g) all-purpose flour
- 5 oz (141 g) shredded suet
- 5 Tbsp (70 g) caster sugar
- 4 oz (113 g) currants
- 1 lemon, zest only
- 1 small orange, zest only
- ¾ cup (180 ml) + 2 Tbsp (30 ml) milk
- Butter, as needed for greasing
Directions
- Prepare steamer by filling a large pot with 2 inches (5 cm) of water. Create a sturdy platform on the bottom of the pot. Alternatively, use a steamer.
- Combine salt, baking powder, and flour in a large bowl.
- Add shredded suet, caster sugar, currants, lemon zest and orange zest.
- Pour in milk and stir to combine into a thick dough.
- Grease a cake pan (that fits inside steamer) with butter and place dough inside.
- Bring water in steamer to a boil and place cake mold onto platform.
- Steam spotted dick for 90 minutes.
- Remove cake pan from pot and allow pudding to sit for 5 minutes.
- Run a knife around the edge of cake pan and invert spotted dick onto a serving platter.
- Serve warm with a custard sauce, if desired.
Notes
- Raisins can be used in place of currants or a mix of raisins and currants.
