Cauliflower Cheese
A classic recipe common in many British households, cauliflower cheese can be served either as a main course or a side dish, though some Brits are insistent that it always be served as the main part of the meal. This easy-to-prepare dish emphasizes the rich cheddar cheese sauce and crunchy breadcrumb topping.

Ingredients
- 1 large cauliflower, broken into florets
- 1 cup (240 ml) milk
- 3 Tbsp (22.5 g) all-purpose flour
- 2 oz (57 g) butter
- 4 oz (115 g) grated cheddar cheese, divided
- ½ tsp (2.5 ml) mustard
- Nutmeg, to taste
- Salt, to taste
- Ground black pepper, to taste
- 1 oz (28 g) fresh breadcrumbs
Directions
- Bring a pot of salted water to a boil.
- Add cauliflower and boil for 10–15 minutes, or until just tender.
- Drain cauliflower and place in a casserole dish.
- Place milk, flour, and butter in a saucepan set over medium heat and simmer stirring continuously for 2 minutes or until sauce thickens.
- Add ¾ of cheese, mustard, nutmeg, salt, and black pepper to the saucepan.
- Cook for 1 minute, stirring well.
- Pour sauce over cauliflower.
- Mix remaining cheese and breadcrumbs together.
- Sprinkle mixture over cauliflower.
- Broil for a few minutes, until golden-brown.
- Serve immediately.
