Bubble and Squeak

Bubble and squeak, a fried hash usually made from leftover cooked potatoes and cabbage, is so named because the cabbage makes a bubbling and squeaking sound as it cooks in the pan. Diced leftover vegetables can be added to the hash, as can bits of meat or bacon. Bubble and squeak is often served as a side dish, or as part of a full English breakfast.

Ingredients

  • 1 lb (450 g) roasted or boiled potatoes, diced or mashed potatoes
  • 1 lb (450 g) cooked cabbage or Brussels sprouts, finely chopped
  • Salt, to taste
  • Ground black pepper, to taste
  • 2 oz (60 g) butter, divided

Directions

  1. Mix together potatoes and cabbage.
  2. Season mixture with salt and black pepper.
  3. Melt half of butter in a large nonstick skillet.
  4. Fry potato mixture for 8–10 minutes until underside is crisp and lightly browned.
  5. Place a large plate over skillet and invert skillet quickly so food falls onto the plate, crispy side up.
  6. Melt remaining butter in pan and gently slide bubble and squeak in.
  7. Fry until both sides are crisp and golden.

Notes

  • For a heartier version of bubble and squeak, add a handful of chopped onion, 1/2 cup (100 g) diced ham, and a handful of green peas.
