Glamorgan Sausages
The Welsh food called Glamorgan sausage is, despite its name and shape, not made of sausage. In fact, it contains no meat at all. A crispy, cheesy, gooey delight, Glamorgan sausage is a vegetarian dish created in Welsh dairy country at a time when cheese was more plentiful than meat, leading it to be nicknamed poor man’s sausage. Glamorgan sausage is named after the historic county of Glamorgan in Wales.

Ingredients
- 1¾ cups (150 g) grated Caerphilly or Lancashire cheese
- 2 cups (125 g) fresh breadcrumbs, plus extra for dredging
- 2 Tbsp (30 ml) finely chopped leeks or spring onions
- 3 eggs, separated
- 1 Tbsp (15 ml) parsley, chopped
- ½ tsp (2.5 ml) thyme (optional)
- 1 tsp (5 ml) English mustard
- Salt, to taste
- Ground black pepper, to taste
- Vegetable oil, as needed for frying
Directions
- Pulse together cheese, breadcrumbs, and leeks in a food processor.
- Whisk together egg yolks, parsley, thyme, mustard, salt, and black pepper in a small bowl.
- Add egg mixture to cheese mixture and pulse until combined.
- Scoop up a small palm-size piece of dough and roll it into a thick cylinder about 2 inches (5 cm) long.
- Repeat process with remaining dough until there are 10–12 rolls.
- Dip each roll in egg white and then dredge it in breadcrumbs.
- Sprinkle rolls with salt and black pepper.
- Heat about 2 inches (5 cm) of vegetable oil in a pan.
- Fry rolls until crisp and golden.
- Serve hot.
Notes
- Sharp cheddar may be substituted for Caerphilly or Lancashire cheese.
